MELLIFERA ~ LE TROU DU DIABLE

Mellifera means honey bearing.  Hence the name of this Saison which contains a good amount of local honey added in the brewing process.  Following the addition of honey,  came a ‘lactic fermentation’ giving it a distinct sourness.   The beer is citrusy and a little funky on the nose, with faint notes of honey.
